Don Timoteo Charuc Sián is the owner of this coffee. Don Timoteo has been the President of La Cooperativa San Pedrana for the last 4 years and a previously 4 years back in 2001. This last March, he finished his second term as President and although he won’t be the Chief in Command anymore, he’ll still be slinging some amazing coffees and working to motivate the change in Yepocapa that’ll benefit his entire community.
So being President for 8 years can teach one a few things or two when it comes to coffee production. Let’s start with his farming practices! Don Timoteo’s land is easily on a 30-40 degree incline slope which makes it difficult to walk, not to mention farming. Realizing that soil erosion could be a real threat to maintaining soil structural and vital nutrients, Don Timoteo planted several layers of bamboo as embankments every 20 feet or so. When it comes to his shade trees, although the Gabriella tree grows faster and is easier to maintain, the Pachum tree offers more nitrogen rich leaves that he uses every harvest as a input of organic material at each plant’s base.
Lastly, this is where it gets fun! Don Timoteo learned about maturation and sugar content this last year and how, by using a refractometer, you can actually measure more or less when your cherries are at peak maturation. This year, he strategically waited to pick his cherries till the majority of them were reading at 22% Brix.
Between the work done out in the field maintaining plant health, shade cover, and picking at the best maturation possible, and the tender care of processing and ensuring separation and traceability on the wet mill side of things, this lot really performed on the cupping table.
Lots like these get us really excited. It shows us that good plant health and good farming practices really do matter. It encourages us to continue working with smallholder farmers to incentivize quality in a way that also encompasses their plant health. When plants are healthy, cherries are harvested with purpose and processed well, there’s no telling what can be produced on a smallholder farming level! And that’s our joy!
