Better Relationships, Better Communities, Better Coffees…

This lot comes from one of our newer and coveted relationships with La Cooperativa San Juan Sacatepequez called Ciacafe for short. They are a new emerging cooperative that’s quite humble about their achievements over a short period of time, starting from practically nothing.

We’re really proud of this lot because it came as a byproduct of collaboration! (It’s in our name! lol!) As we started forming a relationship with Ciacafe, it was outside the normal harvesting months so there weren’t any samples for us to cup. They were also curious about how fermentation plays a role in overall cup quality. Since every wet mill is different, we asked if they’d be willing to do an experiment.

So they processed three coffees with three different styles and timeframes of fermentation. Once the coffees had dried and been roasted, we hosted a cupping and let them cup the differences. It was remarkable to note the difference in sweetness, body, and cleanliness with fermentation as the changing variable.

As a result of that cupping, they specifically produced this lot with us in mind and chose the fermentation method that brought out the best characteristics in their coffees.

As you’ll see, we sometimes have Colectivo lots which are a collective lot of that community. We decided that this lot needed to be named something more fitting so we decided on Lote Selectivo. It’s a lot that was selected for us on many levels from the cherries to the processing, to the drying methods they chose.

It’s an honor to have Ciacafe’s Lote Selectivo. It’s a lot that’s equally meaningful for us as COI as it is for the producers behind CIACAFE. (Oh, did I mention this is their first-ever export to America?!) Cool huh?!
