Single-Origin: Yepocapa Altura
The first of many more to come:
Yepocapa's Altura coffee was the first coffee we ever imported into the United States. It was also the first time these farmers had the opportunity to sell their coffee directly to the US market. This is their specialty coffee and for years it's been sold into the C-Value Commodity market. We're excited to select out this coffee so that the world can appreciate the work of the Campesinos and the flavors found here in Yepocapa.
La Cooperativa San Pedrana separates out all coffee by classifying it as Certified, or Conventional. This selection contains strictly Certified coffee that meets altitude requirements as well as farm health and environmental farming practices. Yepocapa Altura coffee is processed separately, drys on an Anacafe certified drying patios, and then is rested before sent to their professional dry-mill for further processing, sizing, and selection.
Approximately 30% of all coffee's that come into the cooperative are classified at this level. This 30% is comprised of around 40 farmers of whom we've had the honor to meet most of them. Our partnership with them over the last three years has inspired them to realize that quality coffee will be the key for a successful future.
We're excited to see this coffee become even more tasty. We're working on raised drying beds, and even trying a few samples of a natural processed Yepocapa Altura!
